In order to respect technical, qualitative and economic constraints, the basic idea is to use 225L and 500L barrels both for vinification and ageing. To do this, a Vinification intégrale® barrel can be easily converted thanks to the replacement kit. In this way, the necessary equipment can be stocked and reused the next year on new barrels perforated in our cooperage.
